| Sweet Lassi |
Sweet Lassi is a creamy, sweetened yogurt-based ice cream from Punjabi cuisine and is a popular drink in northern India. It is usually consumed after meals or as a refreshing drink on hot summer afternoons. Nowadays, there are many types of lassi like strawberry lassi, rose lassi, mango lassi, original lassi etc. but there are two types, sweet and salted. In this recipe, we make sweet lassi - first we blend the curd until it becomes smooth, then we add sugar and cardamom to the curd for a nice taste. Finally, if necessary, you can dilute it a little by adding water or milk.
Curd is the main ingredient of lassi, so the entire taste depends on it. Use homemade curd made from full fat milk and make sure it does not taste sour to make the perfect milkshake. Ingredients:
2 cups white curd (yoghurt/daihi) (500 ml)
3 tablespoons sugar
1/4 teaspoon cardamom powder
1/2 cup water or milk
1 tablespoon chopped mixed olives to garnish, optional
Directions:
Step 1
Put 2 cups of curd (white yogurt/dahi) in a deep bowl or pan. We used homemade curd in this recipe.
Step 2
Add 3 tablespoons of sugar and 1/4 teaspoon of cardamom powder.
Step 3
Use a hand mixer or wired whisk or hand mixer to beat until smooth.
Step 4
Add 1/2 cup of water or milk. Whisk again for 1-2 minutes or until a good layer of foam forms on top and the sugar is completely dissolved. Sweet lassi is ready to serve. Pour into two separate glasses and garnish with chopped mixed nuts.
Serving Ideas: Enjoy lassi as a cool drink in the afternoon on a hot summer day. Top your shake with a scoop of vanilla ice cream and dried fruit for a party dessert.
